so let me now tell you the recipe, how to make Dal Tadka...
Here i will be making dal for 3 people,

Ingredients -
Arhar dal - 100 grm
ghee
jeera
turmeric powder
salt
onion, tomato, garlic, coriander leaves
kashmiri lal mirch

1) Take one cup of arhar dal or toor dal, which is approximately 100 grm, or you can take 3 fist of dal for 3 head count...
2) Thoroughly wash dal 2-3 times
3) Now add 4 cups of water for 1 cup dal
4) add in this 1/2 tsp turmeric powder, 1/2 tsp salt or to taste
5) now cook dal. 1 whistle in high flame, and 2-3 whistle at low flame.
6) till the time dal gets cooked lets prepare the masala for dal
7) in a pan, add 2 tsp Ghee or clarified butter
8) add 1/2 tsp jeera or cumin seeds, and add 1 tsp chopped garlic
9) add 1 finely chopped onion, and saute it turns golden brown
10) add 2 finely chopped tomato, and cook it till the tomatoes get mushy..
11) the masala is now ready, add the cooked dal into it, add some chopped coriander leaves
12) mix well, now you can serve dal as it is, but if you want restaurant style and dhaba style dal, we have to add tadka in it
13) for tadka, take a tadka pan, add 1 tsp ghee into it, 1/2 tsp jeera, 1/2 tsp kashmiri lal mirch powder or degi mirch.
14) add this tadka instanly into the dal before the tadka turns black
15) and here our dal tadka is ready
16) serve it with roti or rice, taste delicious..

In this Dhokla Recipe I have shown the process
of How to Make Soft and Spongy Dhokla. This is a Besan Dhokla and is also known
as Khaman Dhokla. In this recipe I have shown step by step process of making
Dhokla at home.
Khaman Dhokla is one of the famous Gujju dish and
enjoyed throughout the world.This light snack is easy to make and tempting to
taste.

Instant Besan Dhokla is a term used to make a
point that it can be made pretty quickly and we are proving it here with our
tried and tested recipe.




Khaman or besan Dhokla primarily belongs to Gujrati (a state
in India located on western coast) cuisine but is equally famous in North India
also. And since we are from Delhi, we are a fan too. As a matter of fact, there
are many more different versions like Sandwich Dhokla (Sooji version) or an
Idli Dhokla.




The differentiation between various kinds of Dhokla is made
first with the presentation style and then with the primary ingredient used.
Some people like to use Sooji (Semolina) and others the Besan (Gram flour).




Coming to the device that can be used to steam (mind it, its
not bake) the Dhokla, there are many options available ranging from our Indian
kitchen’s favorite pressure cooker or the standard Microwave .


Dhokla in Idli steamer gives it the Idli shape and the name
too. The process in Idli steamer remains same as we have mentioned in the
pressure cooker recipe.




Conventional Oven is primarily used for baking and NOT
steaming. Hence, it is not a good idea to make Dhokla in Oven.


We have tried the Oven and the results were not positive. The
Dhokla turned out to be a kind of hard rubber in texture.




Dhokla without Microwave? Use the Cooker.

Don’t worry if you do not have Microwave, i will soon share a
recipe without oven.

make dhokla‘, we have all the options for you here. There is no reason for you

Instant dhokla in just 5 mins
Ingredients
                       

►Ingredients of Instant Gujarati Dhokla Recipe .



Chickpea/Besan Flour --- 1 Cup

Lemon Juice --- 1 tbsp 

Salt --- 1/2 tsp or as per taste

Tumeric Powder --- 1/4 tsp 

Water for dhokla Batter Preparation ---1 cup

baking Powder --- 1 tsp

baking soda --- ½ tsp



►For Tadka Preparation



Curry Leaf ---8-10 

Sugar ---2 tbsp (or as per taste)

Green Chilli ---3 to 4 (or as per taste)

oil ---1 tbsp

Black Mustard Seed ---little less then 1 tsp

Water ---1 cup

Grated Coconut ---1/2 tbsp(optional)





Directions
First make a batter mixing chick pea flour,
salt, turmeric powder, and water..
Keep it aside for 30 mins..
Till then prepare tadka
For that heat some oil, add in the mustard
seeds, curry leaves, green chillies, and water, then add some sugar, lemon
juice, salt if you need..
After 30 mins, in the batter add baking powder
and baking soda, mix well...
Pour into a microwave safe bowl..
Now cook in the microwave at 180 C for 2
mins...
After 2 mins your dhokla is ready.. cool it
down a little bit..
Cut into pieces, add the tadka over it..
Grate some coconut over it, and garnish with
some coriander leaves, and serve...

Shahi Matar Paneer

Ingredients


Onion

3-4

Ginger

1 inch

Green chilli

2-3

Cashew nuts

7-8

Oil



Paneer

200 grm

Cumin seeds

1 tsp

Khada garam masala



Garlic paste

1 ½ tsp

Tomato puree

3-4 tomatoes

Peas



Salt

Acc to your taste, i have used 1 tsp

Fresh cream

2 tbsp

Turmeric powder

½ tsp

Red chilli powder

½ tsp

Coriander powder

1 tsp

Kashmiri lal mirch

1 tsp

Garam masala powder

¼ tsp

Kasuri methi

1 tbsp

Kitchen king masala

1 tsp

Directions

First in a grinding jar, add onion ginger,
green chilli, cashew nuts. And coarsely grind them..
Cut paneer into pieces of your desired shape..
Now in a pan, heat 2 tbsp of oil.
Fry paneer pieces in it till slightly golden
brown..
Now in the same pan, add cumin seeds, and khada
garam masala
Then add garlic paste, and stire well..
Add the onion paste that we made
Fry the onion paste till golden brown..
Till then make the masala paste..
For that in a bowl mix all the masalas along
with some water..
Now our onion might have cooked well
Add in the masala paste, cook for a min or so,
and then add the tomato puree..
Until the tomato puree cooks,
Boil some water in a pan, and add in that the
peas, and cook until peas become soft..
Now the tomato puree has cooked well, ad some
water, boiled peas, salt, and fresh cream,
And mix everything well, and cook till
everything goes well together..
Now add the fried paneer pieces and grated
paneer as well..
Cook for 3-4 min, and its ready to be served..

SERVING



garnish with some grated paneer or fresh cream..
And serve with, roti naan, paratha, puri,
pulao.. anything you feel like...

Paneer Roll

Paneer Kathi Roll

A quick appetizer for you (with rotis ready on your hand) to be served to your guest in a hurry. Or a great lunch pack for your kids as it has a lot of paneer, capsicum, cabbage giving it a nutritional benefits. It can be a superb evening snack, everyone will be happy to have a paneer roll at home after a tiring day at work. It also makes your appetite happy... So...

INGREDIENTS ARE:

For the chapattis (4 servings)
All purpose flour               1 cup
Salt                                    ½ teaspoon
Water                                as required
Oil                                     as required

For filling
Oil                                    3 teaspoon
Cumin seeds                    1 teaspoon
Onion                               1 cup (cut into slices)
Ginger/garlic paste         1 teaspoon
Salt                                   according to your taste, make sure that chapatti also has salt
Tomato                             1 cup (cut as small as you can)
Kashmeeri laal mirch      1 teaspoon
Green chilies                     if you want , you can skip if you are cooking for kids
Kitchen king masala        1 teaspoon
Capsicum                         1 cup (cut into slices)
Paneer                              1 cup or 100 gram (cut into slices)

For topping
Cabbage finely chopped
Green chilies
Onion sliced
Tomato ketchup or any other sauce as per your taste

PROCEDURE:
  • First let’s make our dough. In a big bowl add all purpose flour, salt, and gradually adding a little amount of water mix it gently with your hands to form a dough, it will be sticky, but after some time it will be a smooth dough. Now keep it aside in an airtight container. Till then let’s make our filling.
  • In a non-stick pan add 3 teaspoon oil. When the oil is heated enough add cumin seeds, once cumin seeds crackle add onion slices, now add salt as per your taste. Cook this until our onion become transparent, add ginger garlic paste and cook well. And now add tomatoes. Once the onion and tomatoes are done completely add green chilies if required, kashmeeri laal mirch powder, and kitchen king masala. When all of the spices mix well. Add capsicum and cook for 5 mins. Now we have to add just 1 more thing and that is paneer... Add paneer, cook for 5 mins. And now your filling is ready.
  • Now make the chapattis. Roll the chapattis as fine and thin as you can, it is made like rumali roti only. You can use the technique of making rumali roti for this as well, and that will be superb if you can.
  • When its ready cook on a tawa with oil, as oil will turn it to be soft. You can half cook it now and cook completely when you are ready to serve. Now our roti is ready.
  • And now its time to wrap our roll.
  • On your roti place cabbage, filling, onions, chillis if you require, sauce (you can add mayonnaise, mustard sauce, ketchup ) depending on your taste
  • And now wrap it from the two ends first and roll it by the other two ends.
  • Now your paneer kathi roll is ready to be served, serve it with sauce, or any chutney you want.

How to make coffee

Coffee / Cappuccino

Ingredients:
(For 4 cups of coffee)
Sugar                               5 Teaspoon
Coffee powder                 2 Teaspoon
Milk                                4 Cups
Beater is optional

Procedure:
In a large cup add the sugar and coffee... Mix them well.. and now add 2 teaspoon of water and beat it well. You can beat it by your hands, or you can use a beater for the same purpose.
Just do not add excess amount of water, as it may result into a form of thin batter, which will not help us to form a thick coffee...
The point when all the sugar granules disappear, and a shine come over it, is the indication that our coffee is almost ready.
Now boil the milk. And add the milk over the coffee in a cup from a little height, as this will give a frothy effect to our coffee. Now mix it well. and garnish your coffee with sweetened cocoa.
